Blueberry French Toast Muffins with Pecans
Makes 16
cream cheese 8 to 9 oz room temp
8 eggs
1.5 tsp baking powder
1 tsp vanilla
Few splashes of sugar free blueberry toriani syrup
5 or 6 fresh blueberries for each muffin
Chopped pecans on top so 1/4-1/2 cup
Blend everything together but the pecans and fresh berries. Pour in liberally greased muffin tin or foil liner. Fill 2/3 to 3/4 or so up. Add the berries and top with nuts. Bake preheated oven 400 degrees 18 min
